Merimbula Lake, on the Sapphire Coast NSW, is a very small catchment with no large river inflow, meaning the salinity in Merimbula Lake is almost on par with the ocean year-round. This gives Stirling Oysters their unique and captivating flavour.

Stirling Oysters - Farmer Stirling Cullenward

Our Story

Stirling Oysters was established in 2005 by Stirling and Kerry Cullenward when they traded station life on the vast western NSW saltbush plains for the pristine salty waters the Sapphire Coast on the far south coast of NSW. Stirling and Kerry managed a pastoral station on the Hay Plains, some 900 kilometres inland from Merimbula Lake, prior to their sea change. Cattle and sheep had been Stirling’s life growing up on stations across many regions of Australia. This has ensured he has the right skills and experience to work with the Rock Oyster… a live animal that requires particular animal husbandry techniques, just as livestock did in his former career. With the occasional help from the girls, the farm runs efficiently across 5 hectares of pristine water. Stirling Oysters now produces more than 300,000 native Sydney rock oysters annually, distributed throughout Australian restaurants and bars.
